WET DRY OF COCONUT
250G COCONUT MILK (NO SUGAR ADDED)
1 LEAF GELATIN
25G SPRAY DRIED COCONUT MILK POWDER
Dissolve gelatin in small amount of warmed coconut cream. Temper with the rest of the coconut cream, strain, chill to 4Celsius (almost frozen) and whip until fluffy. Serve topped with spray dried coconut cream.
