KEY LIME CLOUD

100ML KEY LIME JUICE
100ML WATER
100G SUGAR
16G EGG WHITE POWDER
2/3 LEAF GELATIN

Bring half water and all sugar to a boil. Mix remaining water with egg white powder to hyrdrate. Dissolve bloomed gelatin in sirop, allow to cool to 45-50C, mix with lime juice, then rehydrated egg whites. Strain, chill to 4C (or just before frozen), then mount until fluffy, and do as you pleaseā€¦
